This is a bit of an adventurous deal. Air China is offering flights to New Delhi, India for $762 return. The flights have a 16 hour and 14 hour layover in Beijing however you can use this to your advantage to check out Beijing on their free 24 hour transit visa.
You may also be able to get a hotel however it's hard to really tell based on their English site and this page in Chinese. Tickets are T class which should be applicable for a hotel. Both flights arrive into Beijing in the morning so not too much point for a hotel other than a shower.
The only other New Delhi deal was posted in March for $859. China Southern has flights for $878 but has one 8 hour layover on the way back. Personally, I'd get the really long layovers to have more time to hang out in Beijing.
Seems to be lots of dates available but can't pull them up easily in Google Flights or Skyscanner.
