My mum has one, you can disable the S mode in settings, its really easy, thereafter you can use it like any normal Windows machine and install anything. Just can't go back to S mode afaik, guess they just wanna try push people to use the Microsoft Store
iirc you can put windows 10 on these for full app functionality
Its just a setting so should be as easy as flipping a switch. Did it on my mothers Surface Go
Just FYI, this product has gone on sale every month since at least December. If you miss it this time around, it's basically a sure thing that it will be on sale again in a month or so at about the same price, so don't panic.
