They seem to range massively in price.. is this a situation you should spend the $ or it really doesn't matter?

Consider buying two single stands, as it allows for more flexibility on how you can mount them and they are usually more functional.
I recently just bought 2x North Bayou F80 monitor stands from Amazon AU and would recommend them as a cheaper option.See comments at Ozbargain for more info.
I recently bought about 6 different brands of monitor stands to do some testing and found this one here to be really good value for money and quality: https://themarket.com/nz/p/zuvio-full-motion-gas-spring-dual…
Thanks! I'm replacing some VERY old 19inch monitors (probably 15+ years!) with 2 x 23inch.
I've got a neoflex stand currently - but hoping to move to something that attaches to the back of the desk to have a bit more space.Definitely go gas arm
Some things I have found -
Do you plan to move the monitors around? Do you plan to go larger?
For one of my work places have setup a stand that would allow for both side to side and top bottom configs depends on what the staff prefer.
At home I had to change my stand to a larger gas arm one as the old one didnt fit two 27" side by side.
Check out Amazon AU as I have found some really good prices on there
