Not sure if I'm just not searching hard enough but I cant seem to find an answer for this. Hopefully someone can point me in the right direction.
If I decide to buy the Kogan mobile $5 starter pack with a new number from them and use up all the 'free' data etc. Would I still have the option to then change the number into the one I currently have(not kogan but One nz)?
I'm not sure but I think you will need an active plan to port a number over Kogan. So if your plan expires, you will need to buy a new plan perhaps the cheapest one, before porting.
It's not quite clear to me why you want to move over after your plan has been used. Note that AFAIK the $5 new customer deal doesn't prevent you from porting. I've never tried it myself but it's something offered when you sign up and it makes no sense that they'd prevent porting. The whole point of the new customer deal is to try and get people to move over to Kogan permanently be it with a new number or their existing number. However if you keep porting the same number over to a new new customer deal, it's possible Kogan will tell you that you're not allowed to do that. (Porting is also not always seamless so if you keep doing it you risk downtime and other problems.)
