        Slow and inefficient

        Best efficiency to worst:
        Induction>Gas>Ceramic/Element

        • With non-induction compatible cookware, you can buy an induction heat diffuser plate off AliExpress for $20-30, depending on size. Please note however that they can warp and stop working if you're not careful.

          Now if only we can have concave induction cookers electrically certified here for sale in NZ, for high-heat stir fry with a round bottom wok.

        • This, and MUCH safer as well.

          A kid can't accidentally turn one on and burn themselves as they require the presence of iron to operate.

          The plate itself doesn't get as hot as the pot, unlike ceramic where the plate is hotter than the pot.

          And as a result neither the device itself, nor the underside of the device where airflow is more restrictive, doesn't get as hot.

          They used to be significantly more expensive, but now they're only slightly more costly. Bunnings has a 600mm induction cooktop for $400 that would run circles around any ceramic cooktop from any brand.

          Cooking on induction is very close to cooking on gas, enough that I'd never recommend someone install gas over induction.

    Practically what do I get for paying over 1k on this gas stove over a 3 to 500 piece from trade depot?

      Generally a higher priced unit will have a higher power output mainly on the Wok burner.

      The $600 one from Tradedepot is 3600w, vs 5000w on this (13MJ/h vs 18MJ/h).
      Spending even more you can get even better (recently purchased one with a 24MJ/h burner)

      When cooking with high heat, this is a massive practical difference eg Stir-frying vs Stir-stewing!

      if you dont really cook, or just do basic in a pot meals then you probably wont notice.

      • This is a really good comparison as I would assume those for household are basically the same unless for commercial

      • You can find concave induction cookers on sale in AliExpress, for round bottom woks.

        No new residential build should use gas anymore, we don't have any cheap domestic gas supply and gas cookers pollutes the kitchen air. California is starting to ban gas stoves.

  • Gas cooktop has been linked to cancer causing emissions.
    I'd look at induction next time we do our renovations (currently on gas)
