My going to gold coast at the end of th year and I wanted to see what the cheapest way to get mobile data and txt/calls wood be. Really will only be using Google maps xD.

Just buy kogan mobile esim or physical sim your choice for $5 you will get unlimited calls and 15 GB data for one month in Australia.
If you would like to stay more then one month buy another one or recharge existing.The $5 for 15Gb is the NZ Kogan offer, not Australia.
For 15Gb in Oz it's $20 for their small plan, although you can get the Medium with 40Gb for $10 and Large with 100Gb on special at the moment.

If it's just for Google Maps you can download the maps and use them offline!
Click on your profile icon, then select 'offline maps' -> select your own map. This won't give you any traffic updates but you should still direct you from A to B within the map areas.
If you want a sim/data, you could either go with a travel esim or purchase a sim card from one of the Australian telcos. It really depends on how long you are there and how much data you need. The airports usually have booths at the airport from all the Telcos so you can pick up a SIM/deal on arrival. I think they offer some bonus data etc but I haven't looked closely.
